Suspected consumption of undercooked pork?

Hello doctor, I recently started practicing cooking and just finished stir-frying some dishes.
Right before I was about to eat, I realized that some of the pork tenderloin I had prepared might not be fully cooked.
I had picked out about 4 to 5 thicker pieces earlier, and upon inspecting them, most of the meat was white with only a small amount of pink.
While eating, I found a piece that had a bright red spot, which looked like blood, but the surrounding meat was mostly white with just a little pink.
I wasn't sure why there was this bright red spot.
I later checked a few more pieces of pork, and they were mostly white without any red spots, but I was still worried about them being undercooked, so I ended up discarding all of it.

I would like to ask, if someone were to consume undercooked pork, what are the common symptoms of parasitic infections that one might observe at home? After how many days of observation without symptoms can I feel reassured? Also, where can I go for testing?
Additionally, I just noticed that the tip of my thumb has a cut, which came into contact with the pork while cutting.
Should I be concerned about anything else?

When it comes to concerns about consuming undercooked pork, there are several important factors to consider regarding food safety, potential infections, and symptoms that may arise from such consumption.

First and foremost, undercooked pork can pose a risk of infection from various parasites and bacteria. The most notable parasites associated with undercooked pork are Trichinella spiralis, which causes trichinosis, and Taenia solium, which can lead to cysticercosis. While the risk of contracting these infections from properly sourced and handled pork is relatively low, it is still a concern, especially if the meat is not cooked to the recommended internal temperature of at least 145°F (63°C) followed by a three-minute rest time.

If you have consumed undercooked pork, the symptoms of potential infections can vary. For trichinosis, symptoms may include nausea, diarrhea, vomiting, fatigue, fever, and abdominal discomfort, which typically appear within 1 to 2 weeks after consumption. In some cases, muscle pain and swelling can occur as the larvae migrate through the body. For infections caused by Taenia solium, symptoms may include abdominal pain, digestive issues, and in severe cases, neurological symptoms if the larvae migrate to the brain.

Regarding your specific situation, if you have consumed pork that appeared undercooked and are now experiencing symptoms such as nausea, abdominal pain, or any unusual signs, it is advisable to monitor your condition closely. If symptoms develop, particularly gastrointestinal distress or muscle pain, you should seek medical attention. A healthcare professional can perform tests to determine if there is an infection and provide appropriate treatment.

In terms of the injury to your thumb, if you have a cut that came into contact with raw pork, there is a risk of bacterial infection, particularly from pathogens such as Salmonella or E. coli, which can be present in raw meat. It is crucial to keep the wound clean and covered to prevent infection. If you notice any signs of infection, such as increased redness, swelling, or pus, you should consult a healthcare provider.

As for the observation period, if you do not experience any symptoms within a week or two after consuming the undercooked pork, it is generally a good sign. However, if you remain concerned, you can visit a healthcare facility for further evaluation. Tests for parasitic infections can be conducted through blood tests or stool samples, depending on the suspected infection.

In summary, while the risk of infection from undercooked pork exists, being vigilant about symptoms and maintaining good hygiene practices can help mitigate these risks. Always ensure that pork is cooked thoroughly, and if you have any doubts about your health after consuming undercooked meat, do not hesitate to seek medical advice.
