Soybeans?
Is it okay to roast black beans in a pot over low heat without adding anything? Is it good to eat them in large quantities? Also, during the process of boiling soybeans to make soy milk, small bubbles appear on the surface; I've heard that this is toxic, is that true? Is it good to cook brown rice with yellow or black beans?

Hello: When frying black beans in a pot without adding anything, it takes a longer time over low heat to cook them thoroughly; however, if they are cooked without burning, that is certainly acceptable.
For healthy individuals, cooking yellow soybeans or black beans with brown rice is also a good combination, as it provides a balance of carbohydrates, proteins (including eggs, beans, fish, and meat), and increases fiber intake.
When boiling yellow soybeans, small bubbles may appear, which are saponins.
Although saponins can be harmful to the human body, they can be destroyed by heating at 100 degrees Celsius for 20 to 30 minutes, so they can be consumed with peace of mind.
Sincerely, Dietitian Shih Kuei-Mei, Director of the Nutrition Department, Taoyuan Hospital, Ministry of Health and Welfare.

More Info
When it comes to consuming black beans, cooking them without any additional ingredients over low heat until they are thoroughly cooked is generally safe and can be a healthy practice. Black beans, like other legumes, are rich in protein, fiber, and various essential nutrients, making them a nutritious addition to your diet. However, moderation is key. Eating a large quantity of any food, including black beans, can lead to digestive discomfort due to their high fiber content. It's advisable to introduce them gradually into your diet, especially if you are not accustomed to high-fiber foods.
Regarding the cooking process of soybeans, specifically when making soy milk, the bubbles that form during boiling are primarily due to the presence of saponins. While saponins can be toxic in very high amounts, the levels present in soy milk are generally considered safe for consumption. Cooking soybeans at temperatures above 100 degrees Celsius for 20 to 30 minutes effectively reduces the saponin content, making the soy milk safe to drink. Therefore, you can enjoy soy milk without concern for toxicity, provided it is prepared correctly.
Combining black or yellow soybeans with brown rice is also a nutritious option. This combination not only provides a complete protein source but also enhances the fiber content of your meal. The pairing of legumes and whole grains is a staple in many cultures and offers a balanced approach to nutrition, supplying essential amino acids, vitamins, and minerals.
In summary, consuming black beans alone is safe and healthy when prepared properly. They can be enjoyed in moderation, and cooking soybeans to make soy milk is also safe, as long as you ensure they are cooked adequately to reduce any potentially harmful compounds. Additionally, pairing soybeans with brown rice is a great way to enhance the nutritional value of your meals. Always remember to listen to your body and adjust your intake based on how you feel, especially when introducing new foods into your diet.
