How to adjust your constitution and restore your health?

I would like to ask you two questions:

My mother is 71 years old and has been a strict vegetarian for about 15 years.

For example, she has been losing weight (currently around 40 kg), has a poor appetite, and usually only eats a bowl of porridge or rice per meal, with porridge being more common.
She says that eating rice causes indigestion and stomach pain (she has been diagnosed with chronic gastritis and is on medication), but porridge does not cause her discomfort.
Additionally, her side dishes have decreased significantly, and her intake of supplementary foods has become even less.
This vicious cycle is leading to a decline in her health; as she eats less, her body becomes weaker.
I would like to ask you, given my mother's poor health, are there any medicinal foods or dietary supplements that could help adjust her nutrition? What can be done to increase her appetite and restore her health?

About 10 years ago, my mother underwent thyroid surgery.
I have heard that patients who have had thyroid surgery should not take ginseng for supplementation, as it may lead to a recurrence.
Is this true? If so, is there a time limit for this restriction?
