Questions about chili peppers?
Hello! I really love spicy food, so I would like to know some information about chili peppers.
1.
I researched that chili powder undergoes a drying process, and chili sauce is made through cooking.
However, since vitamin C is sensitive to high temperatures, does this mean that the chili sauce and chili powder we commonly consume do not contain much vitamin C?
2.
I have a problem with hair loss.
Does eating instant noodles or drinking beverages contribute to hair loss?
Shilun, 20~29 year old female. Ask Date: 2007/02/13
Dr. Shi Guimei reply Nutrition
Hello! Vitamin C is primarily found in fresh fruits and vegetables, and it is easily destroyed during processing.
The vitamin C content is approximately 11 mg per 100 grams of chili powder and about 20.8 mg per 100 grams of chili sauce.
Instant noodles and sugary beverages are high in fat or sugar, and long-term consumption can lead to nutritional imbalances, which can certainly affect health.
If this results in deficiencies in protein and certain minerals, it may lead to hair loss; however, the causes of baldness are complex.
In addition to maintaining a varied and balanced diet and a regular lifestyle, it is advisable to consult a dermatologist.
Wishing you abundant blessings and all the best.
Sincerely, Dietitian Shih Kuei-Mei, Director of the Nutrition Department, Taoyuan Hospital, Ministry of Health and Welfare.

Chili peppers are a popular ingredient in many cuisines around the world, known not only for their heat but also for their potential health benefits. However, when it comes to their nutritional content, particularly vitamin C, and their impact on hair health, there are several important factors to consider.
1. Vitamin C Content in Chili Powder and Chili Sauce:
Chili peppers are indeed rich in vitamin C when fresh. However, the processing methods you mentioned—drying for chili powder and cooking for chili sauce—can significantly reduce the vitamin C content. Vitamin C is a water-soluble vitamin that is sensitive to heat and can degrade during cooking. For instance, while fresh chili peppers can contain as much as 100-200 mg of vitamin C per 100 grams, the drying process for chili powder can reduce this to about 11 mg per 100 grams, and cooking chili peppers to make sauces can further diminish their vitamin C content, often resulting in around 20.8 mg per 100 grams. Therefore, while chili powder and chili sauce do contain some vitamin C, they are not significant sources compared to fresh peppers. If you are looking to boost your vitamin C intake, it is advisable to consume fresh chili peppers or other fruits and vegetables high in vitamin C, such as oranges, strawberries, and bell peppers.
2. Dietary Impact on Hair Loss:
Regarding your concerns about hair loss and the consumption of instant noodles and sugary drinks, it is essential to understand that diet plays a crucial role in overall health, including hair health. Instant noodles are often high in unhealthy fats, sodium, and preservatives, while sugary drinks can contribute to poor nutrition and weight gain. A diet lacking in essential nutrients—such as proteins, vitamins, and minerals—can lead to hair thinning and loss.
Hair requires a variety of nutrients to grow healthily. Proteins are vital since hair is primarily made of a protein called keratin. Deficiencies in iron, zinc, and certain B vitamins can also contribute to hair loss. If your diet is heavily reliant on processed foods like instant noodles and sugary drinks, you may not be getting the necessary nutrients for optimal hair health.
While occasional consumption of these foods is unlikely to cause immediate hair loss, a long-term poor diet can lead to nutritional deficiencies that may exacerbate hair thinning. It is advisable to maintain a balanced diet rich in whole foods, including fruits, vegetables, lean proteins, and healthy fats, to support hair health.
In conclusion, while chili peppers can be a flavorful addition to your meals, their vitamin C content is significantly reduced during processing. For hair health, focus on a balanced diet that includes a variety of nutrients to prevent deficiencies that could lead to hair loss. If you are experiencing significant hair loss, it may also be beneficial to consult with a healthcare professional or a dermatologist to explore underlying causes and appropriate treatments.
