Is it not advisable to simmer bone broth for too long?

I heard that if bone broth is simmered until the soup turns grayish-white, it can be harmful to the body.
Is this true? If so, does this mean that street food like rice noodle soup is also not good for us?

Xiao Wei, 40~49 year old female. Ask Date: 2008/12/29

Dr. Shi Guimei reply Nutrition

Dear Xiao Wei,
Hello! If the broth from boiling large bones turns grayish-white, it may be due to the denaturation of proteins when exposed to heat, which is harmless to health.
However, if the bones themselves are contaminated with heavy metals (commonly lead), prolonged boiling may cause these metals to leach into the broth.
Therefore, it is generally not recommended to boil large bones for an extended period.

Wishing you a Happy New Year filled with peace and health.
Sincerely,

The concern regarding the long boiling of bone broth and its potential health implications is a topic that has garnered attention, especially among health-conscious individuals. Bone broth, made by simmering bones and connective tissues, is often praised for its nutritional benefits, including collagen, gelatin, amino acids, and minerals. However, the method of preparation and the duration of cooking can impact both the nutritional value and safety of the broth.

When bone broth is boiled for an extended period, particularly until it turns a grayish-white color, it can indicate that the collagen and other nutrients have been extracted from the bones. While this process can yield a nutrient-rich broth, there are some considerations to keep in mind regarding health.

1. Nutrient Extraction: Prolonged boiling can lead to the leaching of minerals and nutrients from the bones into the broth. While this is generally beneficial, excessive boiling may also lead to the breakdown of certain beneficial compounds, potentially resulting in a less nutritious product.

2. Lead Contamination: One of the primary concerns with long-simmered bone broth is the potential for lead leaching from the bones, especially if the bones come from animals that were exposed to lead in their environment. Lead is a toxic heavy metal that can have serious health consequences, particularly for children and pregnant women. However, the risk is generally low if the bones are sourced from reputable suppliers and the animals were raised in safe environments.

3. Acrylamide Formation: When cooking at high temperatures, certain foods can form acrylamide, a chemical that has been linked to cancer in animal studies. While this is more commonly associated with starchy foods cooked at high temperatures, it’s worth noting that prolonged boiling of any food can lead to the formation of various compounds that may not be beneficial.

4. Flavor and Texture: From a culinary perspective, boiling bone broth until it becomes grayish-white can also affect the flavor and texture. While some people may enjoy the taste of a well-simmered broth, others may find that overcooking can lead to a less appealing product.

5. Health Benefits vs. Risks: Despite the potential risks associated with long boiling, many people consume bone broth regularly and report various health benefits, including improved joint health, gut health, and skin elasticity. The key is to balance the cooking time to maximize nutrient extraction while minimizing potential risks.

Regarding your concern about street food, such as rice noodle soup, it’s important to consider the source and preparation methods. Many street vendors use bones to create flavorful broths, and while they may not simmer them for excessively long periods, the quality and safety of the ingredients are crucial. If the broth is made from high-quality bones and prepared in a clean environment, it is likely safe to consume.

In conclusion, while long boiling of bone broth can have some potential health implications, these risks can often be mitigated by sourcing bones from reputable suppliers, being mindful of cooking times, and ensuring proper food safety practices. If you enjoy bone broth, consider making it at home where you can control the ingredients and cooking methods, or choose reputable restaurants that prioritize quality in their food preparation.
