Do the yogurt products available on the market actually contain live cultures? Are they really effective? If I want to make my own, how should I do it?

A-Ming, 20~29 year old female. Ask Date: 2004/11/15

Dr. Hu Yuqing reply Nutrition

A-Ming: Hello, I am not very clear about all the commercially available yogurt.
You can check if it contains live bacteria on the label.
What does "effective" refer to? You can refer to the Food Information Network homepage > Announcements > Approved Health Foods > List of Health Foods Approved by the Department of Health at http://food.doh.gov.tw/life/health/qualify_food.htm to inquire about the health benefits of yogurt.
I haven't made it myself, so I don't dare to recommend it.
Thanks.
Wishing you good health.

Yogurt drinks, commonly found in supermarkets, often claim to contain live cultures, which are beneficial bacteria known as probiotics. These probiotics are believed to promote gut health, enhance digestion, and even support the immune system. However, the effectiveness and the actual presence of live cultures in these products can vary significantly depending on the brand and the manufacturing process.

To determine whether a yogurt drink contains live cultures, it's essential to read the label carefully. Look for terms like "live and active cultures" or specific strains of probiotics, such as Lactobacillus or Bifidobacterium. The presence of these terms indicates that the product contains live bacteria that can confer health benefits. However, keep in mind that some products may undergo pasteurization after fermentation, which can kill off these beneficial bacteria, rendering them ineffective.

In terms of effectiveness, research suggests that consuming yogurt drinks with live cultures can have positive effects on gut health. Probiotics can help balance the gut microbiota, potentially alleviating issues like diarrhea, constipation, and irritable bowel syndrome (IBS). They may also enhance the absorption of nutrients and support the immune system by inhibiting harmful bacteria.

If you're interested in making your own yogurt drinks at home, the process is relatively simple and allows you to control the ingredients and ensure the presence of live cultures. Here’s a DIY guide to making yogurt drinks:

Ingredients:
1. Milk: You can use whole, low-fat, or non-fat milk. The choice depends on your preference.

2. Yogurt Starter: This can be a store-bought yogurt that contains live cultures or a specific probiotic starter culture.

Instructions:
1. Heat the Milk: Pour the milk into a saucepan and heat it over medium heat until it reaches about 180°F (82°C). This step helps to denature the proteins in the milk, which results in a creamier yogurt.

2. Cool the Milk: Remove the saucepan from heat and let the milk cool down to about 110°F (43°C). You can use a thermometer to check the temperature.

3. Add the Starter: Once the milk has cooled, add a few tablespoons of the yogurt starter to the milk. Whisk gently to combine, ensuring the starter is evenly distributed.

4. Ferment: Pour the mixture into a clean container and cover it with a lid or a clean cloth. Place it in a warm environment (around 100°F or 38°C) for 6-12 hours. You can use an oven with the light on, a yogurt maker, or a warm spot in your kitchen. The longer you let it ferment, the tangier the yogurt will become.

5. Refrigerate: After fermentation, check the consistency. If it’s thickened to your liking, transfer it to the refrigerator. It will continue to thicken as it cools.

6. Flavoring (Optional): Once your yogurt is ready, you can blend it with fruits, honey, or other flavorings to create a delicious yogurt drink.

Storage:
Homemade yogurt can be stored in the refrigerator for up to two weeks. You can save a few tablespoons of this batch to use as a starter for your next batch.

In conclusion, yogurt drinks can indeed contain live cultures, but it's crucial to check the labels for confirmation. Making your own yogurt drinks at home is a rewarding process that ensures you get the benefits of live probiotics while allowing you to customize flavors to your liking. Regular consumption of yogurt drinks with live cultures can contribute positively to your digestive health and overall well-being.
