I have a question: isn't it said that we should try to avoid eating leftover food? However, I have friends who are trying to lose weight and they prepare one to three days' worth of weight-loss ingredients, cooking them and storing them in glass containers.
They heat them up for breakfast and lunch each day.

Hello! It is indeed true that nutrients from food are best obtained when consumed fresh.
Research has shown that frequently consuming leftover food that has been broken down by bacteria can lead to the formation of carcinogenic nitrites, increasing the risk of gastric cancer.
However, nitrates found in vegetables are harmless; when pickled or stored for too long, they can be converted into harmful nitrites through bacterial action.
Additionally, it is important to choose fresh ingredients to preserve the natural nutrients and phytochemicals in food.
The effects of leftover food are primarily based on statistical studies, and there have not yet been direct experimental confirmations on living organisms.
Therefore, it is still recommended to ensure that food is thoroughly cooked, kept at temperatures below 7 degrees Celsius, and consumed after boiling or heating to over 100 degrees Celsius to effectively reduce bacteria, which is a better safeguard for health.
