Fresh milk with lemon?

Hello: I would like to ask if adding lemon to fresh milk causes the milk to curdle...
will this affect the body's absorption of the nutrients in the milk? Or can both of these foods still provide their nutritional benefits when consumed together? Will there be any negative effects? I really enjoy this combination...
so I want to know if it's harmful to consume it this way.
Also, I haven't noticed any curdling in the milk...
thank you!

Hello! Milk is rich in protein, and there are many types of protein denaturation, one of which is isoelectric point denaturation.
Each protein has a different isoelectric point, and when the pH changes, certain proteins reach their isoelectric point.
At this point, the solubility of the protein decreases, leading to precipitation.
Therefore, when acidic lemon juice is added to milk, the proteins form curds.
This phenomenon does not affect nutrient absorption; it is purely a matter of personal preference.
For example, the coagulation of salty soy milk is also due to the isoelectric point denaturation of soybean protein.
The milk you drink may not have coagulated because its acidity did not reach the isoelectric point.

More Info

Mixing fresh milk with lemon juice is a common culinary practice that can lead to the coagulation of milk proteins, primarily casein. This process occurs because the acidity of lemon juice lowers the pH of the milk, causing the proteins to denature and form curds. However, this does not necessarily mean that nutrient absorption is negatively affected.
When lemon juice is added to milk, the primary nutrients in milk—such as proteins, fats, carbohydrates, vitamins, and minerals—remain present, albeit in a different form. The curds that form can still provide a good source of protein and calcium, which are essential for growth and development, especially in children. The liquid that separates from the curds, known as whey, also contains nutrients, including some proteins, vitamins, and minerals. If you choose to discard the whey, you may lose some of these nutrients, but the curds themselves will still be nutritious.

It is important to note that the coagulation of milk does not inherently make it less nutritious or less absorbable by the body. The body can still digest and absorb the nutrients from both the curds and the whey. In fact, the process of making cheese from milk can enhance the digestibility of some nutrients, as the fermentation process involved in cheese-making can break down certain compounds that may be harder to digest in their original form.

Regarding your concern about whether mixing lemon juice with milk could lead to digestive issues, for most individuals, this combination is generally well-tolerated. However, some people may experience discomfort if they are lactose intolerant or have a sensitivity to dairy products. In such cases, using alternatives like lactose-free milk or plant-based milk could be beneficial.

In summary, mixing fresh milk with lemon juice does not adversely affect nutrient absorption. Instead, it can create a nutritious product that is rich in protein and calcium. If your goal is to introduce homemade cheese to your child, this method can be a fun and healthy way to do so. Just be mindful of the whey, as it contains additional nutrients that can be beneficial if consumed.
If your child is not accustomed to drinking milk, introducing it gradually and in various forms—such as cheese—can help them adapt to the taste and texture. Additionally, incorporating other sources of calcium and protein into their diet, such as yogurt, fortified plant-based milks, or leafy greens, can ensure they receive adequate nutrition. Always consult with a pediatrician or a nutritionist if you have specific concerns about your child's dietary needs or if they have any food allergies or intolerances.
