How to buy milk?
Hello Dr.
Tang: I heard that some milk is not actually fresh milk obtained directly from cows, but rather reconstituted from powder.
Should we choose real fresh milk from cows for better nutrition? How can we select genuine fresh milk from cows? Could you recommend some brands available on the market? Thank you.

Dr. Tang Weili reply Nutrition
Tom: Hello! By consuming dairy products, we obtain sufficient calcium, vitamin B2, and high-quality protein.
Among commercially available dairy products, plain fresh milk labeled as "fresh milk" from cows has the richest nutritional content, while flavored milk, milk beverages, and yogurt drinks are not pure milk and often contain only 30% or less of the nutrients found in pure fresh milk.
Fresh milk from reputable brands will not be reconstituted from milk powder.
In recent years, some manufacturers have utilized High-Temperature Short-Time (HTST) pasteurization, which better preserves heat-sensitive nutrients such as lactoferrin and immunoglobulins compared to Ultra-High Temperature (UHT) pasteurization; however, the overall difference is not significant.
Most commercially available fresh milk is processed using UHT pasteurization, so please pay attention to the packaging instructions to ensure quality and safety.

More Info
When it comes to choosing fresh, nutritious milk, it's essential to understand the differences between various types of milk products available on the market. Many consumers are concerned about the authenticity of milk, particularly with the prevalence of milk powders and other substitutes. Here’s a comprehensive guide on how to select genuine fresh milk and some brand recommendations.
Understanding Milk Types
1. Fresh Milk vs. Powdered Milk: Fresh milk is directly obtained from cows and is minimally processed, retaining most of its natural nutrients. In contrast, powdered milk is made by evaporating milk to dryness, which can lead to some nutrient loss. While reconstituted powdered milk can be a convenient option, it often lacks the richness of fresh milk in terms of vitamins and minerals.
2. Nutritional Content: Fresh milk is a rich source of calcium, vitamin B2 (riboflavin), and high-quality protein. It is important to note that flavored milk, milk drinks, and yogurt drinks often contain significantly lower nutritional values compared to pure fresh milk, sometimes as low as 30% of the nutrients found in whole milk.
How to Choose Fresh Milk
1. Look for Labels: When shopping for milk, look for labels that specify "fresh milk" or "whole milk" without additives. Avoid products labeled as "milk drink" or "flavored milk," as these often contain added sugars and artificial ingredients.
2. Check the Processing Method: Fresh milk is typically pasteurized to eliminate harmful bacteria. The most common methods are High-Temperature Short Time (HTST) pasteurization and Ultra-High Temperature (UHT) pasteurization. HTST is preferred for retaining sensitive nutrients like lactoferrin and immunoglobulins, but UHT is widely used for its longer shelf life. Always check the packaging for processing details to ensure quality.
3. Expiration Dates: Always check the expiration date on the packaging. Fresh milk has a shorter shelf life compared to UHT milk, so ensure you consume it before the date indicated.
4. Brand Reputation: Choose brands known for their quality and transparency. Brands that emphasize their sourcing and processing methods are often more reliable.
Recommended Brands
While specific brand recommendations can vary by region, some well-known brands in the United States that are recognized for their quality fresh milk include:
- Organic Valley: Known for its organic dairy products, Organic Valley offers fresh milk from pasture-raised cows.
- Horizon Organic: This brand provides organic milk options and is committed to sustainable farming practices.
- Stonyfield Organic: Offers a variety of organic dairy products, including fresh milk, with a focus on health and environmental sustainability.
- Local Dairy Farms: Many regions have local dairy farms that sell fresh milk directly to consumers. Supporting local farms can ensure you receive fresh, high-quality milk while also contributing to your community.
Conclusion
In summary, when selecting fresh milk, prioritize products that are labeled as fresh, check for processing methods, and consider reputable brands. Fresh milk is indeed more nutritious than reconstituted powdered milk and provides essential nutrients that are beneficial for overall health. If you have specific dietary concerns, such as lactose intolerance, consider low-lactose options or consult with a nutritionist for tailored advice. Enjoying fresh milk as part of a balanced diet can contribute significantly to your nutritional needs.
